Quinoa Pizza Sticks

1/2 cup quinoa
1 cup water
1 tablespoon olive oil
1/4 cup grated Parmesan cheese
1/4 cup shredded mozzarella
1/2 teaapoon dried basil 
1/2 teaspoon dried oregano 
1/2 teaspoon garlic powder
1/2 teaspoon salt
Dash of pepper
Pinch of paprika
2 eggs

Add quinoa to a mesh strainer. Rinse until water runs clear. Put quinoa in a medium saucepan over medium heat with 1/2 tablespoon of olive oil. 

Once you hear the quinoa sizzling, add water. Bring to a boil. Once it is boiling, cover and simmer for 15 minutes. Take the lid off and keep on low heat for 10 minutes.

Preheat oven to 425 degrees F.

Transfer cooked quinoa to a large bowl and let cool. Once cool add eggs, remaining 1/2 tablespoon olive oil, Parmesan cheese, mozzarella, basil, oregano, garlic powder, salt, pepper and paprika. Mix thoroughly. 

Line a baking sheet with parchment paper. Transfer quinoa mixture to baking sheet. Flatten with a spatula or your hands to shape a pizza crust. Bake for 20-25 minutes until edges start to get crispy.

Top with sauce, more mozzarella cheese and toppings of choice. Bake for another 5-10 minutes or until cheese has melted. Let cool for 5 minutes then cut into stick shapes.
